A lot of people ask how to have a healthy breakfast. That’s still quick and easy. And not expensive…. YES! it can be done. Introducing Michelle’s Magic Morning Muffins, a healthy, fast, inexpensive, nutritious, portable breakfast that never flops no matter how you mess with it. Here Goes…
Michelle’s Magic Morning Muffins
- Grease (or line with paper cups) a muffin tray (I use the big muffin tray but both sizes work; simply adjust baking time).
- In a bowl mix together 1 cup oats (or gluten-free oats or 1/2 oats and 1/2 bran flakes or even left-over neglected muesli) 1/2 cup milk (or almond milk or kefir or even yoghurt) and stand for 5 minutes (or more, no stress). In a large bowl combine 1 cup flour (or spelt flour or gluten-free flour or wholewheat flour), 3 tsp baking powder, 1/4 tsp salt and 1/4tsp cinnamon, make a well and set aside.
- Stir 3/4 cup maple syrup (or honey, xylitol, sugar or applesauce – I find 3/4 too sweet and only add 1/2 a cup), 1/4 cup butter (or almond, cashew or any peanut butter) and 2 lightly beaten eggs (I have never used an egg substitute, but don’t be scared to try) into the oat mixture.
- Add egg mixture all at once to flour mixture and stir until moistened. Mixture should be lumpy.
- At this point I have added : 1/2 cup nuts, frozen berries, raisins, chocolate-covered cranberries, chopped banana, stewed apple and combinations of the above
- Spoon batter into cups, filling them about 3/4 full. Sprinkle with nuts (optional).
- Bake at 200C for 15-18 mins for small muffins and about 35-40 mins for big muffins. Cool on a rack
What Our Customers Are Saying
At the end of February this year, I ended up contracting Hepatitis A. For those of you who do not know, this is an extremely aggressive viral infection which attacks the digestive system and in particular the liver. There is no cure and antibiotics do not work. It clears itself out of the system within about 2 months to a year and then luckily, I will be naturally immune. Because of the malfunctioning of and damage to the liver, I have to be extremely careful of what I eat and drink. I also become tired extremely quickly. Also, due to this, one becomes jaundiced and because of the extreme fatigue irritable. Now, this is where the compliment comes in. If it were not for Michelle Kaminer at The Good Health Shop, I would not have made it through the last month. Her patience and advice have been invaluable. From diet, what to eat, drink, and what to avoid all the way through to how to destress and stay calm. She is an expert in this field and has literally saved my life. Slowly, I am healing from within and looking forward not only to a full recovery but also a much enhanced healthy lifestyle post recovery. She has taught me one very valuable lesson, and that is “The body is a self-healing organism. It is up to us to clear things out of the way so that the body can heal itself. ” If anyone is looking for a wholistic approach to health as opposed to the normal cut, burn and poison approach, she is the lady to see. Those of you looking for fast fixes to weight loss (pills and shakes) or instant but temporary fixes for health issues such as high blood pressure, diabetes, stress, etc. She is not your go-to girl. She does things the right way. The way we, as humans, need to heal through nature. That is her expertise. Some may fob this off as mumbo jumbo witchcraft. To those, I say, next time you are prescribed a myriad of pills for your next ailment go take an hour or two to read the contraindications, side effects and ingredients of what you have been given to take. Never forget, you are free to choose but whatever you choose you will live with the consequences of your choice. From the bottom of my heart, THANK YOU, Michelle.

“If you do what you’ve always done, you get what you always got”
Having recently received my new reading glasses, I have become more aware of how poorly I actually see when I’m not wearing them. It’s not that my eyes have deteriorated in 3 weeks; it’s that before these specs I thought the way I was seeing was the best there was....
Dietitian or Nutritionist – what’s the difference?
Many people mistakenly use the terms “dietitian” and “nutritionist” interchangeably. Although these two professions are undoubtedly related, my personal view is that nutritionists are under the healthcare umbrella, while dietitians are a part of the sickness industry....
Yes, we are what we eat!!
In last week’s blog we said ‘With every meal and snack you are either fighting disease or feeding it’. How crazy is it then that the people who sell our food are not interested in our health and the people who take care of our health are not interested in our food?!!?...
We can control what goes in…
Sometimes ideas for a blog happen because I see the same issues happening over and over and other times I really have to think about what to say. I am always careful not to let the blog deteriorate into a full-blown rant; it’s so easy when you feel passionately about...
Menopause…
Menopause is such a loaded word, packed with negative connotations. This next phase of a woman’s life should be filled with prescription drugs frequent tests and fear and tribulation – older women should know themselves, know what they want from any situation and be a...
Is my body healing itself?
We have been lied to our whole lives about our body’s ability to heal itself. Our internal ‘doctor’ is amazingly astute, as long as it has the correct tools for the job. Unfortunately, symptoms ignored or mistreated for a very long time disable this internal healing...
Who isn’t tired, right?
This blog is for you if you are prepared to consider that the culprit is probably your eating habits. There’s a compelling wealth of research that closely links the food we eat with our energy levels. Simply, a few relatively easy tweaks will change the picture –...
Are You Ready to Change & Grow?
Facing challenges is inevitable. It might be a rare event, it might be daily struggle. The analogy of a baby’s birth, a difficult process for both mother and infant, is a necessary tussle; perhaps you are not able to reconcile the challenges in your life with...
